Winemaking Process: Henri Giraud puts the best round and in the bottle. This Ratafia is based on a 20-year-old Solera which gives it its slightly oxidative side, think Madeira. Sweet only survives by the grace of sufficient acids and that is also the case here. What a fantastic discovery!
Tasting Note: The wine mixes unfermented grape juice from Champagne grapes and Marc de Champagne, a neutral alcohol from Champagne grapes, into a sweet fortified dessert wine of about 16% alcohol.
